The municipal Acetaia, where the precious Balsamic Vinegar ages, is located in the attic of the east wing of the Gonzaga Castle, in the heart of the historic center of Novellara.
There age two batteries of fine barrels, scrupulously branded with the emblem of the city of Novellara. Nothing is left to chance in the long aging of vinegar. The number of barrels and their capacity and sequence are decided by the master vinegar of the Brotherhood of Traditional Balsamic Vinegar.
The vinegar produced in the Fortress is available to the local administration for institutional purposes. In particular, it was decided to give a symbolic pack of vinegar as a gift to those couples who celebrate a civil marriage ceremony at the town hall.
