Giardiniera

Giardiniera is a traditional preserve made from chopped vegetables, briefly boiled in salted water and white wine vinegar, then stored in a tangy sweet-and-sour brine. Usually served as an appetizer or as a side dish to accompany cheeses, cold cuts, or stews, it typically includes carrots, cauliflower, celery, pickles, peppers and scallions. 

The practice of preparing Giardiniera dates back as far as the Lombard era, when rural communities devised this method to preserve surplus vegetables and enjoy them during the winter months.

Over time, this simple yet ingenious recipe spread throughout the Italian Peninsula, taking on different flavors and variations depending on the region.
