Sugo d'uva
Sugo d’uva is a traditional dessert with a soft, pudding-like texture, originally prepared with grape must - the sweet, unfermented juice that settles at the bottom of the vat after pressing - thickened with wheat flour to make it both hearty and nourishing.
Born in the countryside during harvest time, sugo d’uva remains most authentically produced between September and October, though it can now be found year-round.
Alongside vinegar and Lambrusco, it represents one of the most inventive and cherished uses of grape must in local culinary tradition.
